In the past I drank more drinks than I do today, it usually enough with 1-2 drinks before dinner etc and it is fun to vary between different drinks. Something that has always been true love in my heart is Mojito, who does´nt like that!? Before Midsummer, I made these good Mojito drinks with passion fruit and rhubarb syrup. I also made another Mojito on Midsummer but that recipe will be up in another post.
250 gram rhubarb
135 gram granulated sugar
50 gram water
Clean and cut the rhubarb in 2-3 cm long pieces. Put them in a saucepan and add sugar and water. Boil and simmer for about 10 minutes. Allow the pure to drain into a strainer. Press with a spoon so that all liquid flows out. Pour the juice into a saucepan and cook without lid for syrupy consistency about 5 minutes. Let cool.
Now, if you don´t get a hand on rhubarb you can change it for exempel raspberries or why not cloudberry.
Mojito with Passion Fruit & Rubarb Syrup
4-6 cl rum, vodka or as we used this time, Shochu (Japanese traditional hard liquor)
About 1/2 lime, cut into wedges
1 tablespoon rhubarb syrup
3-4 leaf mint
1 passion fruit
Use a muddler to crush lime, alcohol and mint. Add the mixture in a glass and fill your glass with ice. Add half a passion fruit & rhubarb syrup. Put a long spoon in the glass and slowly fill with sparkling water as you constantly stir in the glass. Fill almost all the way up with sparkling water and add with the other half passion fruit, more mint & lime slices as decoration. Drink & enjoy..
